Our specialist butchery division offers an exceptional range of fresh, high quality meat, poultry and game in a choice of cuts to satisfy all of our customers’ requirements. We can provide full traceability and demand the highest standards of hygiene and safety. We are proud to announce that during our 2020 audit, our Butchery Team were awarded a BRC ‘Grade A’ for the production of meat products. 


UK Sourced

All of our fresh meat is guaranteed to be UK sourced. We have links with over 40 Cumbrian farms, and where possible we try and use locally sourced meat in our product range. If we are not able to provide Cumbrian product you can rest assured that our product is still supporting British farmers.


Full Traceability 

We have invested in an electronic food traceability system for our butchery department to minimise food safety risks and improve operational efficiency in the same time.

This advanced system is able to collect data from source to dispatch, often sloganed as “from farm to fork” and process sales orders from dispatch to invoice. It combines scale, printer and label generation in one unit and integrates seamlessly with our warehouse management system (WMS).


Production Facility

Our state-of-the-art production facility at Caterite produces a large of handmade sausages, burgers and kebabs. 

We produce over 5 tonnes of sausage a week, and employ two dedicated butchers who are the creators and brains behind our famous sausage recipe, known for its quality, specially selected ingredients and unique taste.


Prepared to your specification

Our Butchers are keen to provide the very best customer service. If you require your meat to be prepared or packed in a certain way, simply advise us of this when placing your order. They will prepare your meats exactly as required. (Don't forget to use 'Note' function when placing orders online!) Whether vacuum-packed or not vacuum-packed, skin on, skin off, bone-in, boneless, rolled, tied, trimmed or flattened, we are always happy to help.


NEW 2020 Himilayan Salt Chamber

Our himalayan salt wall was hand built using a bespoke racking system to house the bricks to optimise air flow, and maximise the effects of the salt ageing process.

The translucent blocks which vary in colour from white to orange and a myriad of shades of pink were imported from mines in the foothills of the Himalayas in Pakistans Punjab region which date back over 250 million years. Each of the 1200 salt blocks was individually hand cut. The health and therapeutic benefits of Himalayan salt have been known for centuries but its benefits in the dry ageing of meat are only a recent phenomenon.

Through a process called ionisation the negative ions from the salt counteract the positive ions of meat and result in a totally unique sweet and flavoursome end product. It is not the salt alone but a combination of temperature and humidity combined that deliver supreme dry aged meat. The salt wall creates the perfect environment over the ageing period and concentrates the flavour of the meat. It purifies the air in the room producing a clean and fresh atmosphere. Whether it is science or alchemy or a combination of both the result is aged beef with a purity of flavour not often encountered before.

 


Salt Aged Duck

The Gressingham duck is a unique breed that first came about when the small but flavoured wild Mallard was crossed with the larger Pekin duck giving a meaty, succulent duck with more breast meat, less fat and a rich gamey flavour.

Our Gressingham duck breasts and fronts are delivered fresh to us every week. We salt age the products in a controlled environment for 3 to 4 days in order to enhance the flavour before they are packed on site by our experienced butchery team.


Accreditations

Our butchery is awarded BRC Grade A in the 2020 audit recognising our dedication to food safety and customer service.

BRC Global Standards is a leading safety and quality certification programme, used by over 20,000 businesses in 90 countries. The Standards are a worldwide guarantee of quality, safety and operational criteria and ensure that manufacturers fulfil their legal obligations and provide protection for the end user. Our certification at Caterite covers the butchery of meat and the production of meat products as well as the slicing and packaging of continental meats and cheese.

We are also a member of the Quality Standard Mark Scheme for Beef & Lamb. The Quality Standard Mark Scheme is developed by the Agriculture & Horticulture Development Board (AHDB) and is the only scheme in the UK to cover eating quality. It provides one of the highest level of quality assurance of beef and lamb and is equivalent to the Red Tractor Scheme in terms of food safety, animal welfare and environmental impact while encompassing additional requirements for eating quality.
