Description
Black Garlic Ice Cream — intensely flavourful yet beautifully balanced, with the deep, sweet complexity of aged black garlic and subtle notes reminiscent of balsamic, molasses, and dried fruit. The result is a smooth, velvety ice cream with a rich savoury-sweet depth and a lingering umami finish.
Black garlic is created by ageing fresh white garlic under carefully controlled heat and humidity over several weeks. During this process, the cloves darken and soften, developing their distinctive mellow flavour profile — far removed from raw garlic, and instead layered, sweet, and gently tangy.
Exceptionally versatile in savoury applications, it pairs beautifully with cacio e pepe and other cheese-based pasta dishes, where it adds depth and contrast. It also works strikingly well on a cheeseboard, offering an unexpected but harmonious counterpoint to rich and aged cheeses.
It enhances ragu-based dishes and risottos (either stirred through or served alongside), and complements roasted beetroot, apple, and hazelnut combinations. For seafood, it is particularly effective with prawns, langoustine, or lobster, where its sweetness and umami bring balance and complexity.
