Solstice is a soft, washed-rind cheese crafted by White Lake using rich Jersey cow’s milk. Its distinctive peach-hued rind is delicately washed in local Somerset Cider Brandy, imparting savoury aromas and a gentle complexity that perfectly complements the natural sweetness of the milk.
True to its Jersey milk origins, the cheese has a vibrant golden interior and a supple, creamy texture. The rind develops delicate wrinkles as it matures, contributing to its visual and textural appeal.
Reminiscent of cheeses from France’s Champagne region, Solstice offers a mild, sweet flavour with a subtle lactic acidity.
